I love to eat this recipe with of course chips, but also love to make these sweet potato flatbreads into mini form they make the perfect vessel for this salsa. Leftovers are also amazing on top of your favorite protein or bowl recipe.

All you need for this dish is

  • Ripe avocados
  • Canned black beans
  • canned corn
  • cilantro
  • green onion
  • tomatoes
  • dried oregano, cumin and salt
  • lime juice and zest
  • white balsamic vinegar and olive oil

This is a one bowl recipe and a crowd favorite. You wont be able to stop after one bite simple, easy and full of flavor. Also great source of nutrition healthy fats from avocado, fiber from the beans and corn and micronutrients from spices and herbs!

The ultimate party in a bowl! The perfect salsa -Loaded with chunks of avocado, plus plenty of black beans, cilantro, lime, red onion, this is a quintessential dip for chips, but also acts as a wonderful side dish or salsa for proteins.

  1. Mix first 8 ingredients in a bowl and season with salt and lime zest. Mix olive oil, vinegar, lime juice, oregano, cumin  and salt into a bowl mix to combine. Add dressing to salsa, mix well and add adjust seasonings if needed. 

     

    Can be made 1 day ahead ( if making ahead wait to add avocados until before eating)  and leftovers will last in the fridge for 3 days.
