Starting with flavorful sauteed shallots, this dish features orzo pasta and finished simply with tomatoes, peas and parmesan cheese. This side dish is vegetarian on its own, but also great served alongside a protein like grilled chicken or steak and even fish. This dish is ready in twenty minutes, making it a quick and easy dish to prepare for busy weeknights.

All you need for this dish is

  • orzo
  • garlic and shallot
  • peas ( fresh or frozen)
  • canned tomatoes
  • heavy cream or coconut milk if dairy free
  • parmesan cheese
  • basil

Simple and so delicious easy enough for the kids to make too if you have any. Store in a glass container and this dish will keep in the fridge for up to 5 days!

  1. Bring a pot of water to a boil. Season with salt and add orzo cook for 5-7 minutes or until al dente and drain ( reserve 1 cup of pasta water) 

    In a medium skillet. Heat olive oil and add shallot and garlic season with salt and cook for 2-3 minutes until translucent. The add drained tomatoes and cook for 3-4 minutes. Stir in peas and pasta. Then add in cream, parmesan and 1/2 cup pasta water. Stir cooking until warmed through. Add more pasta water if needed. Stir in balsamic vinegar and Taste and add more salt if needed. Finish with basil and serve.
