Grilled Guacamole

Guacamole is hands down the best dip wether for a party or taco night. To take it to the next level I love to grill the avocados. Grilling avocados is one of my favorite things to do. Adds so much flavor and the buttery avocados get the best texture when they get warmed up too.

It’s a smoky guac that is great to make if you’re already utilizing the grill. I’ve found myself wanting to make it even when I’m not using the grill.

BECAUSE THE FLAVOR IS TOP NOTCH. SERIOUSLY.

All you need is:

  • avocados
  • poblano pepper
  • green and red onion
  • salt and cumin
  • cilantro
  • lemon and lime juice
  • olive oil
  • pumpkin seeds

This dip is made best the day you are going to eat it. Make sure you taste and adjust spices if needed. Bring this to your next taco party. Happy cooking XOXO

Grilled Guacamole

  1. Heat grill to medium heat. Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Place cut avocado sides on the grill and grill 3-4 minutes. Meanwhile also palace the red onion , lemon and lime and poblano pepper on the bbq and grilled until charred.Remove the avocado from the skin and place the avocado flesh into a bowl. Remove skin and seeds from poblano chop with red onion and add to the bowl.
    Add the lemon juice, lime juice, red onion, chives, cilantro, pepitas, cumin, salt and pepper. Mash with a fork or put in a food processor until half smooth and creamy. Taste and add more salt and if desired.
