Pesto Salmon the perfect healthy delicious fish recipe. Tender fillets of salmon slathered with pesto and baked in 10 minutes, this healthy dinner recipe is exactly what to cook for dinner next week.
Pesto is one of my favorite sauces to buy or make. It’s that flavor bomb where you toss it with anything and makes delicious cooking so easy. I always make a big batch and then place servings into ice cube trays and freeze so I have it on hand whenever needed.
The ingredients in this dish:
- Pesto – since pesto is made with olive oil, it helps to keep the salmon ultra moist.
- The lively basil and nutty Parmesan in pesto give the salmon vibrancy.
- Salmon. Rich in protein, omega-3 fatty acids, and vitamins, salmon is a healthy choice. When selecting salmon fillets, I recommend looking for wild-caught varieties, as they tend to be leaner and contain more minerals. Make sure the fillets you select are free of spots and bruising and do not smell “fishy”.
- Lemon – I love to finish every dish with acid and I fond lemon pairs perfectly with the salmon and pesto
If you want to make a quick pesto all you need is 2 cups fresh basil, 1/2 cup grated parmesan,1/2 cup toasted pine nuts, 3/4 cup olive oil , 1 tsp salt, 2 garlic cloves. Place all in a blender and blend until smooth. Eat right away or store in the fridge for 3-5 days.
This is a great meal prep dish or perfect for a quick weeknight dinner. I love to serve this dish with roasted veggies, orzo or farro and a simple side salad. Simple and delicious Pesto Salmon all you need is salmon, pesto and salt!
Heat oven to 400'f. Line a baking sheet with parchment. Place each piece of Salmon skin side down on baking sheet. Season each piece with salt then brush pesto on top. Bake 7-10 minutes or until fish is cooked to desired doneness. Remove from the oven and finish with lemon juice and pine nuts.
