Grilled Summer Corn Salsa and Hummus

Grilled Corn Succotash!! 

There is nothing like crispy, juicy grilled corn straight off the grill. The one thing when you buy corn you always have to buy a ton of it because the farmers prefer to sell it in bulk so they can get rid of it faster. Once corn is harvested it really only lasts a few days at peak freshness. Hence why I love making a succotash with grilled corn! A few notes on buying try and get non gmo corn and the husks should be green and tight. Right when you get them home wrap them in a damp paper towel if you are not planning on using them right away!

Grilled Corn Succotash!! 

Ingredients
  • 2 ears of corn
  • 2 pounds zucchini (large)
  • 1 cup roma tomates (peeled and diced)
  • 3 tablespoons jalapeño (seeded and diced)
  • 1/2 cup chopped cilantro
  • 1 cup green onions (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 lime (juiced)
  • kosher salt and pepper (about 1 tsp each)
  • 3 cups store bought hummus or homemade
Instructions
  1. Place corn husks directly on grill. Grill for 6-8 minutes or until kernels are toasted. Brush zucchini with avocado oil and season with salt and pepper. Cook until beginning to brown 3-4 minutes per side. Remove corn kernels from husk, chop zucchini and add remaining ingredients into a bowl. Season with salt and pepper to taste. Spread hummus into the bottom of a bowl or on a plate and top with salsa. Serve with your favorite veggies, chips etc! 

  2. Remove from oven and discard rind and leaves . Add mixture to blender add remaining ingredients blend until smooth! Taste to adjust seasonings and serve!
