Grilled Corn Succotash!!
Place corn husks directly on grill. Grill for 6-8 minutes or until kernels are toasted. Brush zucchini with avocado oil and season with salt and pepper. Cook until beginning to brown 3-4 minutes per side. Remove corn kernels from husk, chop zucchini and add remaining ingredients into a bowl. Season with salt and pepper to taste. Spread hummus into the bottom of a bowl or on a plate and top with salsa. Serve with your favorite veggies, chips etc!
Remove from oven and discard rind and leaves . Add mixture to blender add remaining ingredients blend until smooth! Taste to adjust seasonings and serve!
