Grilled Summer Corn Salsa and Hummus

Grilled Corn Succotash!!  There is nothing like crispy, juicy grilled corn straight off the grill. The one thing when you buy corn you always have to buy a ton of it because the farmers prefer to sell it in bulk so they can get rid of it faster. Once corn is harvested it really only lasts a few days at peak freshness. Hence why I love making a succotash with grilled corn! A few notes on buying try and get non gmo corn and the husks should be green and tight. Right when you get them home wrap them in a damp paper towel if you are not planning on using them right away!
