HAPPY EARTH DAY! ⁣ One way I love to celebrate m HAPPY EARTH DAY! ⁣
One way I love to celebrate mother nature is to eat and cook with foods in season. Also make sure I keep an inventory of my fridge and pantries so I use what I have and reduce as much waste as possible. This dish was a fun one to make. It's a twist on Spinch and artichoke dip. ⁣
 I decided to make it the other day and put a fun twist on it. Instead of the typical ingredients I used leeks, collard greens, artichokes, peperoncinis and a white bean sauce. You would never guess it’s dairy free and healthy. It was a complete experiment and I have to say I think I like it better than the original! ⁣

14 years ago ….. I walked up to a red brick buil 14 years ago ….. I walked up to a red brick building, through two tall glass doors. Took an elevator up to the 8th floor to fight one of the biggest battles of my life. I was ready, sweating from nerves and could feel the pit in my stomach. When I took that step off that elevator all I saw was one door with a small window and two hallways on each side. The door read UCLA’s treatment center for Eating disorders. I knew I was sick and needed help and tired of starving myself and continually failing at getting healthy and back to myself. I knew once I walked through that door I was not coming out until this battle was won. Fast forward 4 months later I was discharged and healthier than I had been in 8 years and 14 years later still healthy . It’s very hard to explain this experience without writing a novel but the reason I am sharing this today is because I want you to know that whatever you are going through there is someone who has gone through it and is there to talk and support you.. DO YOU, BE YOU , FOR YOU!! We are all unique and special in this world and have something to give even if we don’t know it yet. This is just one small part in this book I call life but it has shaped me, challenged me and made me who I am today. ⁣

TODAY I use my personal and coaching expertise to take the confusion out of what healthy eating is so you back energy, heal fatigue and finally feel whole again. Fuel the day with love and connection and use food as medicine! Tahini Date White Chocolate Oatmeal cups! If you l Tahini Date White Chocolate Oatmeal cups! If you love tahini as much as I do you will love these bite sized treats. These cups are nutty from the tahini, sweet from the dates and chocolatey from the cacao. My all time favorite tahini is @soomfoods the flavor and texture is incredible. These are great to make with the kids and a perfect #desserttherapy activity! ⁣
Tahini Oat Cups⁣
1 cup tahini @soomfoods⁣
1/3 cup date syrup @nu_naturesuperfoods ( Danielle05) ⁣
1 tsp vanilla extract ⁣
1 cup gluten free or regular oats ⁣
pinch of salt ⁣
1 tbsp chia seeds ⁣
1 tbsp ground flax ⁣
3/4 cup cacao butter, @navitasorganics melted ⁣
sesame seeds for topping ⁣
Place tahini, silan and vanilla in a food processor and mix to combine. Add oats, salt, chia and flax seeds mix until it all combines into a smooth but chunky dough. Divide mixture evenly into 9 muffin tin cups and press to fill the mold. Pour cacao butter over each and sprinkle with sesame seeds. Place in the freezer for at least one hour or until ready to eat.
