QUICK AND EASY RECIPE! Cheers to the weekend every QUICK AND EASY RECIPE! Cheers to the weekend everyone nothing better than a quick and delicious meal to kick off the weekend. I love making tacos and always have so much fun making new salsas and using veggies as shells. ⁣

⁣
Tacos⁣
1 lb Grass fed beef @belcampomeatco ( code SAVOR for 20% off) ⁣
1 pkg @sietefoods taco seasoning ⁣
1 lime zested and juiced ⁣
2-3 large radishes thinly sliced or your favorite shells ⁣
⁣
⁣
Heat sauce pan and cook beef until almost cooked through add spice mix per package directions. Once cooked finish with lime juice and zest. ⁣

⁣
Salsa ( makes more than you will need for tacos) ⁣
⁣
⁣
2 large avocados, diced ⁣
1 bunch cilantro, chopped⁣
1 bunch green onions, diced⁣
4 roma tomatoes, seeds removed, diced⁣
1 large poblano pepper, charred, skin removed and diced ⁣
1 jalapeno, seeds removed, diced ⁣
2 cans organic black beans, drained and rinsed ⁣
1 can organic corn, drained and rinsed ⁣
1/4 cup olive oil⁣
2 tbsp white balsamic vinegar ⁣
2 limes juiced ⁣
Zest 1 lime ⁣
1 tbsp dried oregano ⁣
1 tsp + 1 tsp kosher salt ⁣
Mix first 8 ingredients in a bowl and season with salt and lime zest. Mix olive oil, vinegar, lime juice, oregano and salt into a bowl mix to combine. Add dressing to salsa, mix well and add adjust seasonings if needed.

 I was making lunch the other day and wanted tuna so I foraged my fridge and it came out delicious so I thought I would share. I love eating canned seafood not only is it so affordable but so healthy for you. You can get all your omega’s in one serving and they are an amazing source of high quality protein.  I like my tuna a little on the dryer side so feel free to add more mayo if you want. I served mine in cabbage leaves with avocado on the bottom the perfect amount of crunch and creaminess. ⁣

1 can @wildplanetfoods tuna ⁣
2 -4 tbsp @primalkitchenfoods mayo ⁣
1 tbsp chopped pepperchonis ⁣
1 tbsp fresh chopped dill ⁣
1 tsp whole grain mustard ⁣
kosher salt and pepper ⁣
avocado for serving ⁣
Place all ingredients in a bowl and mix season with salt and pepper to taste.
