Seared Halibut with Mango Salsa

Simple and delicious seared halibut with a juicy mango salsa. Sometimes the easy recipes are the best. I absolutely love cooking with halibut because it’s like bank slate and can really hold up to any flavors you use. If you can make sure you buy Wild caught halibut from a reliable source( I love costco) because you want to make sure you get the highest quality as well as greatest nutrition from the fish.

For this recipe I simply made a rub with cumin, chili powder, salt and coriander. One key thing before you apply the rub is to make sure you pat the fish dry with paper towels. Rub both sides of the fish with the rub and sear in a hot pan on each side for 3-5 minutes. For the mango salsa I used fresh ripe mangos, chopped scallions, cilantro, lime zest and juice and my favorite Siete foods hot sauce . Serve it on top of the fish or stuff it in a taco shell and dinner is on the table in less than 30 minutes.

Delicious and Simple seared halibut with mango salsa
Ingredients
  • 4 (6 ounce) Halibut Steaks
  • 1 tsp cumin seeds, toasted
  • 1 tsp coriander seeds, toasted
  • 1 tbsp chipotle chili powder
  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • 2 tbsp avocado oil
  • Mango Salsa
  • 2 large mangos peeled and diced
  • ½ cup chopped cilantro
  • 1 lime zested and juiced
  • ¼ cup red onion finely diced
  • 3 green onions diced
  • ½ tsp siete foods hot sauce
  • ½ tea kosher salt
  • ½ tea chili powder
Instructions
  1. Place cumin seeds and coriander seeds on food processor and pulse a few times. You just want to crack the seeds not pulverize them. Mix with remaining spices. Pat halibut pieces dry with paper towels and rub the spice mixture on each side. Heat the avocado oil in a very large sauté pan over medium-high heat until hot but not smoking. Cook the halibut until well browned on one side, 3 to 5 minutes. Turn and cook the other side until the fish is done, 2 to 4 min.
  2. Place all ingredients in a bowl mix and allow flavors to sit for at least 30 minutes.
