Sheet Pan Pizza with Summer Ripe Tomatoes and Herby Goat Cheese!

Tomatoes are in full force at the Farm and since summer is nearing the end I am trying to soak up every minute of all the produce. No better way than to make pizza at home! You only need a few ingredients and this is such a fun recipe to make with the whole family. You can make your own crust or buy from your local favorite pizza Shop. Just make sure you let the dough come to complete room temperature before baking.

Sheet Pan Summer Tomato Herbed Goat Cheese Pizza

Juicy Summer Tomaotes topped on a herby Goat Cheese and Crispy Crust. The perfect Summer pizza!

  • 1/2 pound pizza dough
  • 2-3 large summer tomatoes sliced
  • 4 cloves garlic 2 thinly sliced, 2 grated
  • 1/4 cup extra virgin olive oil plus more for drizzling
  • 2 tbsp fresh thyme leaves
  • 1 pinch red pepper flakes
  • 1 pinch kosher salt and black pepper
  • 1 log goat cheese
  • 1/4 cup fresh basil chopped, plus more for serving
  • 1/4 cup fresh oregano chopped 
1-2 tsp fennel seeds
  • 2 tbsp balsamic glaze


  • Position the oven rack in the upper 1/3 position. Preheat the oven to 500 degrees F. at least 30 minutes before baking, preferably 1-2 hours ahead. If you have a baking stone, start preheating it.
     Place the ball of pizza dough on a lightly oiled quarter sheet pan. Lightly drizzle olive oil on top of the dough ball. Cover with plastic wrap and let rest for at least 30 minutes, preferably 2-5 hours, if time allows.
    Slice tomatoes and place on a towel season with salt and allow to sit for 20 minutes. 
    In a bowl break up goat cheese and mix in 2 grated garlic cloves,  fresh herbs and fennel seeds. Season with salt and pepper 
    To assemble. Remove the plastic wrap. Gently press the dough until it covers the entire sheet pan. Drizzle the dough lightly with olive oil. Spread on the cheese all over the bottom and top with the thinly sliced garlic cloves and then the tomatoes. 
    Slide into the preheated oven and bake for 10 minutes, rotate the pizza, and bake another 3-5 minutes or until the crust is golden and the cheese has melted. Top the pizza with fresh basil and drizzle with balsamic glaze
