Healthy Pepperoni Zucchini

Roasted Pepperoni Zucchini all the flavors of pepperoni but instead of meat its zucchini. Easy, healthy and so delicious!

Zucchini is the vegetable of the summer! I love it personally so much because its a blank slate and really can take on any flavors. Also quick cooking and perfect for any dish.

Zucchini contains many nutrients. As a result, including it in your diet may have a variety of health benefits. Although zucchini is often considered a vegetable, it is botanically classified as a fruit.

For this recipe and any recipe spices are the key to flavor. When you have high quality spices it makes healthy cooking so much easier. I love to get my spices from Burlap and Barrel all spices are single sourced directly from the farms all over the world. Making the spices so potent and making all the food you cook so delicious. Spices offer so many micronutrients that a key to a healthy diet!

All you need for this recipe is:

  • Zucchini
  • olive oil
  • smoked paprika
  • mustard powder
  • salt
  • fennel seeds
  • garlic powder

This recipe is so simple you literally mix the spices with the oil and toss with the zucchini. Roast for 15 minutes and your pepperoni zucchini is ready for gobbling up!

Healthy Pepperoni Zucchini

Vegan pepperoni made from zucchini "cured" in oil and spices - perfect on a pizza or with an antipasto platter. It really tastes like pepperoni!



  1. heat the oven to 425'f. Line 2 baking sheets with parchment paper. 

    Thinly slice zucchini and place in a bowl. 

    In a small bowl mix oil and spices. Then toss with zucchini and spread out on baking sheets. 

    Roast for 15 minutes flipping halfway through. 

    serve right away or store in the fridge for 3 days.
