Paleo Toffee Chocolate Chip Cookie Dough Balls!! No bake, refined sugar free and healthy with a holiday twist.
I love the flavor of pecans and toffee and thought why not mix it with cookie dough and boy did they come out delicious! These are a great twist for your holiday baking or cookie sharing packages!
Some of my favorite holiday memories revolve around making cookies with my cousins and of course saving some for Santa. I thought this year Santa might need some relief from all the cookies he eats and these toffee cookie dough balls are perfect for him.
They are easy to make and fun for the kids too. All you need is almond flour, oat flour, maple syrup, toffee flavored Stevia , cashew butter, vanilla, chocolate chips and pecans. Soft and fluffy in the middle and crunchy on the outside.
A few tips when making the cookie dough make sure you allow it to chill it enhances the flavor and also gives it more of that cookie dough texture. Toast your pecans and then chop them also set a timer so you don’t burn them ( happens to me all the time). Finally you can eat them any way roll into balls, stuff into brownies (recipe coming soon) or eat straight from the spoon!
Paleo Toffee Chocolate Chip Cookie Dough Balls
- 1 cup almond flour
- 1/4 cup oat flour
- 1/4 tsp kosher salt
- 3 tbsp maple syrup
- 1 tbsp toffee flavored stevia
- 3 tbsp cashew butter
- 1/2 tsp vanilla extract
- 1/2 cup dark chocolate chips
- 1/2 cup toasted pecans, chopped
- Sift almond flour, oat flour and salt in a bowl. In a separate bowl stir maple syrup, stevia, cashew butter, vanilla until evenly combined. Fold into flour mixture with chocolate chips until combined. Allow to chill for at least one hour. When ready to eat roll into balls and then roll into toasted pecans!!
