Peanut Butter Brownie Stuffed Cookies! One bowl refined sugar free, no flour or oil and so delicious!!

These cookies have become my new favorite cookies not just to make but also to eat. I am a true peanut butter lover and I am constantly looking for healthy ways to add it to treats that are good for all of us. Peanut butter cookies and brownies are two of the most popular desserts why not combine them together.

A quick note on peanut butter make sure you buy organic peanut butter with just the nuts no added sugar and oils. All you need is the nut no need to add more harmful oils and sugar to your diet. My favorite is Santa Cruz Organics and Trader Joes organic crunchy or creamy whichever you prefer.

These cookies require everything you probably have in your pantry right now. All you need is peanut butter, vanilla extract, eggs, coconut sugar, salt and these brownie chocolate bars from Evolved Chocolate

A small tip on making these make sure you chill the dough for 30 minutes and you might want to make a double batch as these will go fast especially if you have kids! They store amazing in the freezer and also taste just like a peanut butter cup when cold. Perfect for a hot summer day!

Ingredients
  

  • 1 cup organic peanut butter
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp espresso powder optional
  • Pinch of salt
  • 1 Evolved chocolate brownie Chocolate bar

Instructions
 

  • Mix peanut butter, sugar, egg, vanilla and salt in a bowl until combined. Set in the fridge for 30 minutes. When ready to bake roll the dough into 6-8 balls and stuff 1 square of chocolate inside. Place on a parchment lined sheet and bake for 8-10 minutes finish with maldon salt if desired.
