Jalapeño Chimichurri the ultimate meal prep sauce!!
I make variations of this on a weekly basis. I had a plethora of jalapeños I got from the produce man at the grocery store. So I decided to use them in this sauce.
One thing I do wherever I live is get to know the produce workers. I love to know what is fresh and also if I am looking for something particular they will most likely order it for me.
Also look for the discount section in the produce isle it’s what I call the dollar bin! They have them in all Kroger stores and a few natural markets. This is the first area of the store I go to first. Most of the time the produce is in great shape and just has a few nicks or bruises. Its one of my favorite ways to help reduce waste and save money!
This sauce is perfect for breakfast, lunch and dinner. Stays in the fridge for up to a week if it lasts that long!!
- 1 cup packed parsley leaves chopped
- 1/2 cup cilantro chopped
- 3 tbsp oregano chopped
- 3 garlic cloves minced
- 1 shallot finely minced
- 2 whole jalopenos seeded and diced
- 1/2 cup olive oil
- 3 tbsp red wine vinegar
- 1/2 tsp red chili flakes
- salt and pepper to taste
- Place all ingredients except olive oil in a bowl mix well. Scoop mixture into a jar and pour olive oil on top. Season with more salt if needed.
