The best way to cook spaghetti squash! There are quite a few ways to cook spaghetti squash but my favorite is in the oven. It is really easy and the squash comes out like noodles not mushy or in short strands. One key tip when purchasing the squash is to make sure it is bright yellow. The brighter in color the sweeter the squash.
Step 1: Cut the squash into 3-4 pieces depending on the size.
Step 2: Scoop out the seeds and place on a parchment lined baking sheet.
Step 3: Roast in the oven at 375’F for 40-60 minutes or until tender. Remove from the oven and allow to cool, then peel away from the skin.
I love to use spaghetti squash in place of pasta, in a breakfast hash and even make pizza crust.
