Herb Roasted Mushrooms!
Mushrooms one of my favorite vegetables that are available to us all year round. I love them because they are so meaty and absorb flavors like a sponge. Perfect for non- meat eaters and nutrition wise they are loaded with vitamin D, B12 and protein.
They cook quickly and when roasted in the oven they create there own lucious sauce perfect for pasta, eggs and even salad. I have never met a mushroom I didn’t like there are so many varieties to choose from. For this recipe I used oyster, poratbello and chanterelles but please feel free to use your favorites.
This recipe is so simple you literally take your mushrooms and place them in an oven safe dish, season with salt, pepper, herbs and whole garlic cloves. Add 1 cup of your favorite high quality olive oil and roast in the oven at 300’F for 40-50 minutes. When they are done add 1 tbsp of your favorite vinegar and they are ready for eating! I use this olive oil cooking technique weekly in my kitchen depending on the vegetables I have on hand. Its perfect when you are in a pinch and need a delicious vegetable or sauce.
Herb Roasted Mushrooms
- 2 lbs mushrooms
- 1 tsp kosher salt
- 1 tsp fresh cracked pepper
- 4 garlic cloves peeled
- 1 cup olive oil
- 1/4 cup fresh herbs (thyme, parsley)
- 2 tbsp balsamic vinegar
- Heat oven to 300'F. Place mushrooms, garlic, herbs, salt and pepper into an oven safe baking dish. Cover with olive oil and bake for 40-50 minutes. Remove from the oven and add vinegar. Serve right away or allow to cool and store in the fridge for up to 10 days.
