
Healthy five ingredient nut butter cookies yes please! I have a huge sweet tooth and have a sweet treat every night. As much as I love eating sweets I love to bake as well. These cookies are loaded with nut butter, dates, vanilla, an egg, chocolate chips and peanuts. One of my favorite nut butters is Nutzo it is a seven seed and nut mixture that is full of nutty good ness. The dates add sweetness and are a natural sugar with a ton of nutritional benefits therefore make these cookies on the healthier side. These cookies come together in 20 minutes and are perfect for an after school snack or post dinner treat. Be prepared these get gobbled up quickly so you might want to make a double batch.
- 1 cup nut butter
- 1 cup pitted dates
- 2 tsp vanilla
- 1 egg
- 1 cup chocolate chips
- ¼ cup peanuts (optional)
- Heat oven 350.
- Place nut butter, pitted dates, vanilla and egg in food processor and mix until combined. Add chocolate chips and peanuts if using and pulse until combined. Roll dough into 8 balls and place on parchment lined cookie sheet. Bake 9-12 minutes.
