Ultimate chocolate lovers dream gooey fudgy gluten free brownies!
These brownies are crispy on the edges and gooey in the middle my favorite way to eat a brownie! A little over a year ago I found out I had a huge intolerance to gluten and needed to go gluten free for my health. It was a bit of an adjustment for me since I love dessert so much but it has been fun to get to learn a new way to bake my favorites, hence these brownies.
I know there are so many gluten free brownie recipes online but I think you will love this one! It’s healthyish I use monkfriut sweetener in place of regular sugar, add espresso powder to bring out the richness in the chocolate and only 1/2 cup of your favorite gluten free flour!
Needless to say get your ovens ready for these one bowl, crinkle top, fudgy brownies!

Gluten Free Fudgy Brownies
- 1 stick grass fed butter
- 8 ounces semi sweet chocolate
- 1 cup monkfruit sugar
- 3 eggs cold
- 1/2 tsp espresso powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup gluten free flour
- 1 1/2 cups dark or semii sweet chocolate chips
- Heat oven to 350 F. Spray 8×8 pan with coconut or avocado oil set aside. Melt butter and chocolate in a pan and whisk in sugar and espresso powder, allow to cool. Once cooled whisk in eggs one at a time. Add vanilla and salt and mix to combine. Fold in flour and chocolate chips. Pour batter into prepared pan and bake 28-32 minutes.
