Freezer Meatballs!

This recipe has been a family favorite for years! My mom actually asks me to make her a couple of batches every time I come home to visit. They are easy to make and perfect for having in the freezer when you need to get dinner on the table fast.

These meatballs are filled with flavor and perfect for pasta, sandwiches and grain bowls. Two key things I make sure I do when making meatballs is not over mixing the meat and buying good quality meat. My favorite is from

Ingredients
  

  • 1 lb grass fed ground beef
  • 1 lb mild or hot pork sausage
  • 1 cup sourdough breadcrumbs
  • 1/2 cup warm water
  • 2 eggs
  • 1/2 cup fresh parmesan cheese
  • 1/4 cup organic tomato sauce
  • 1/2 sweet onion finely chopped
  • 1/2 cup italian parsley chopped
  • 1 tbsp italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp kosher salt and pepper

Instructions
 

  • Place breadcrumbs in a bowl with warm water allow to soak for a few minutes. In a large bowl add beef, pork, eggs, cheese, seasonings, onion, parsley and tomato sauce. Mix a few times and then add breadcrumbs ( make sure you squeeze out excess water) and mix until everything is incorporated. Roll into equal sized balls and place on a baking sheet freeze for 1 hour. Than transfer into a bag and freeze for up to 3 months.
