Oven roasted chicken with tahini roasted cabbage and lentils.

  • 4 boneless skinless chicken breasts
  • 2 tbsp toasted fresh ground coriander seed
  • 2 tbsp ghee melted
  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • Cabbage
  • 1 small head red cabbage thinly sliced
  • 2 tbsp tahini
  • Juice half lemon
  • ½ tsp kosher salt and black pepper
  • Lentils
  • 1 cup red lentils
  • 2 cups vegetable broth
  • 1 carrot chopped
  • 1 clove garlic chopped
  • ½ onion diced
  • 1 tbsp ghee
  • Pinch of salt
  • ½ tsp Aleppo pepper(optional)
  1. Chicken:Heat oven 375 F. Season chicken with coriander, salt and pepper. Place in an oven safe baking dish and drizzle ghee on top. Bake for 15-20 minutes.
  2. Cabbage: Heat oven 450 F. Whisk lemon juice, tahini, salt and pepper in a bowl add cabbage and toss until fully coated. Place on a baking sheet and roast 15-20 minutes until crispy
  3. Lentils:Rinse lentils. Melt ghee in saucepan over medium heat add onion, carrot, garlic and season with salt. Saute until they begin to carmelize. Add lentils, Aleppo pepper and broth stir and bring to a rapid simmer and reduce heat. Simmer on low for 20-30 minutes.
