Easy and delicious roasted radishes with a miso balsamic glaze.
Happy wednesday friends I can not believe we are two weeks away until christmas. I am excited for the new year and new adventures. 2019 has definitely been a unique year for me but I am taking the ups and downs all positive and looking forward to continuing to grow as a person and brand next year.
Roasting vegetables is absolutely something I do a few times a week. I love being able to mix up flavors and vegetables to create delicious tasting vegetables. I recently started radishes to the mix and they are so tasty. When roasted they get crispy on the outside and soft but not mushy on the inside.
You simply toss trimmed radishes in avocado oil, salt and pepper. Roast for 20 minutes and then toss with a balsamic vinegar miso mixture and place back in the oven for 10 more minutes. When they come out of the oven you have crispy flavor packed veggies that the whole family will devour.
Easy Roasted Radishes
- 2 bunches radishes cleaned and trimmed
- 1 tbsp avocado oil
- 1 tbsp each kosher salt and pepper
- 2 tbsp balsalmic vinegar
- 1 tsp miso paste
- Heat oven to 400'F. Toss radishes in a bowl with avocado oil, salt and pepper. Place on a baking sheet and roast for 20 minutes. While radishes are roasting whisk balsalmic vinegar and miso paste in a bowl. Remove radishes from the oven and toss in miso mixture. Bake a additional 10 minutes or until crispy.
