Chili Rubbed Pork Chop with Grilled Peach Salsa

The good ole pork chop!! I love pork and have grown up eating almost weekly. My mom always either grilled them or baked them in the oven and they were delicious. As I have been cooking for other families I realize how many people don’t eat it. I feel like it is the forgotten white meat. It has a great source of protein, minerals and a nice change up to the basic chicken breast.

One of my favorite ways to treat pork is to create a delicious rub filled with a ton of flavor. For this rub I chose smoked paprika, chili powder, granulated garlic, cumin , cayenne and a pinch of coconut sugar to balance out all the spice. Now the pork would be so delicious just with this rub but let me tell you when you add a salsa on top it is even better. Enter the grilled peach salsa. Summer is peak season for peaches and I love grilling them which helps caramelize the sugars and bring out there delicious sweetness. They pair perfectly with the pork making this meal delicious and easy for the summer bbq season.

  • 4 bone in pork chops
  • 1 tbsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp granulated garlic
  • 1/2 tsp cayenne pepper
  • 1/2 tsp coconut sugar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 large peaches pits removed
  • avocado oil
  • 1 tsp coconut sugar
  • pinch of salt
  • 1 lime juiced
  • 1/4 cup chopped cilantro


  • Mix all spice ingredients in a small bowl. Rub spice mixture over both sides of pork chops. If time allows place uncovered in fridge for 1 hour uncivered. When ready to cook remove from fridge and sit at room temperature for 30 minutes. Heat a grill or grill pan over medium heat. Place pork on the grill and cook until the pork chop releases from the grill, about 4 minutes. Flip and cook on the other side for another 3 minutes. While pork is grilling prepare the peaches. Brush peach halves with avocado oil and sprinkle on sugar place on grill and grill 3-5 minutes on each side or until sugars caramelize. Remove from grill, chop and mix with lime and cilantro. Serve peach salsa with pork chops!
