Radicchio a delicious bitter vegetable. Have you ever cooked with it?
I remember as a kid this was the part of the salad I never ate because it was too bitter now I absolutely love it. Bitter foods are so good for you and they have huge health benefits they moderate hunger and blood sugar and offer a plethora of vitamins and minerals. A few favorites are Arugula, brussel sprouts, celery, cranberries, kale and dark chocolate.
This salad is so simple and perfect for a quick side dish or starter to a meal. I simply marinated the radicchio and apples in balsamic vinegar and olive oil, seasoned with salt and pepper. Then grilled them and finished with chopped nuts, lemon zest and grated garlic. A little sweet and a ton of flavor, even the kids love it!
Balsamic Grilled Radicchio and Apples
- 2 whole radicchio cut in half or quarters
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tsp kosher salt
- 1 tsp pepper
- 1 large green apple cut into 4 pieces
- 1 tbsp lemon zest
- 2 garlic cloves grated
- 1/4 cup fresh parsley chopped
- Preheat bbq grill. In a bowl whisk olive oil, vinegar, salt and pepper add radiccio and apple pieces. Toss in dressing and allow to marinate for 10 minutes. When the grill is hot place apple slices and radicchio on grate and grill 6-8 minutes turning halfway though or until cooked to desired cosistency. Once cooked remove from grill and place back into the same bowl, toss with lemon zest, garlic and herbs. Serve Immediately.
