Chili Rubbed Pork Chop With Grilled Peach Salsa

The good ole pork chop!! I love pork and have grown up eating almost weekly. My mom always either grilled them or baked them in the oven and they were delicious. As I have been cooking for other families I realize how many people don’t eat it. I feel like it is the forgotten white meat. It has a great source of protein, minerals and a nice change up to the basic chicken breast.

One of my favorite ways to treat pork is to create a delicious rub filled with a ton of flavor. For this rub I chose smoked paprika, chili powder, granulated garlic, cumin , cayenne and a pinch of coconut sugar to balance out all the spice.
