Nothing worse than under or over cooking food! Here are the minimal internal temperatures for food! 

Beef, pork, veal and lamb - 145’f 
Fish and shellfish - 145’f
Ground meat - 160’f
Ground poultry - 165’f
Poultry- bone in - 165’f 
casserole- 165’f
Leftovers - 165’f 

With all of these in order to check I highly recommend a meat thermometer 🌡️ and insert it into the thickest part of the meat ensuring it doesn’t touch the bone!

Today is going to be all about tacos perfect for leftovers and any meal during the week ! 

1. Change up your typical tortilla there are so many delicious varieties to try now a days from gluten free to veggies! 
2. Grill your tortillas on the BBQ or char in a cast iron skillet! It imparts a delicious smoky flavor and adds that extra level of flavor. 
3. Make sure you have something pickled, creamy and crunchy ( radish or onion, guacamole and cabbage) 
4. Make a few different fillings - one meat, one fish and one veggie 
5. Use leftovers - nothing better than throwing everything in a tortilla like roasted veggies and even eggs. 
6. Use those cilantro stems!! They have the most flavor and add a delicious bite to the taco! 
7. Make a taco bar spread out everything on the dinner table and let everyone have fun and get creative with there own creations.

Have you ever roasted a whole Cauliflower? Its so easy and one of my favorite ways to eat this veggie!  There are a few methods but I love to Steam- roast the heads. All you need to do is steam the head just until almost fork tender then lather in the @seedandmill chili tahini sauce and roast and 425’f for 10-15 minutes or until cooked and crispy! 

This dish is great for meal prep and It is full of flavor.
